When Scent Meets Taste: A Collaboration Between a Chocologist and Quintessence Paris

In September 2022, Victoire Finaz marked a new chapter with the release of her second book, “Chocolat, du plaisir à la santé”—a tribute to the sweet richness of cacao and its many virtues, featuring unique recipes that bridge indulgence and well-being.

To celebrate this milestone, Victoire joined forces with Quintessence Paris to create an aromatic experience like no other: a scented bookmark—a fragrant companion to the book’s launch at the legendary Fouquet’s in Paris.

Hand in hand with the perfumers, an olfactory balance takes shape.
The note created is a delicate equation, blending Victoire’s memories from her travels through cacao plantations and production facilities, enriched with a gourmand touch reminiscent of cocoa powder, with its subtly sweet nuances.
This collaboration unfolds through intimate conversations, delving deep into memory’s corners—seeking out the scents and emotions that resonate with Victoire’s authenticity as a chocologist.

The cocoa absolute, with its waxy, animalic, and woody notes, merges with a gourmet cocoa powder accord, rich and mouthwatering.

Olfactory composition:
Vanilla, dry woody notes like hay or aged woods, animalic and leathery nuances, honey, dried fruits, buttery notes, spices, roasted tones such as coffee, and soft balsamic accents.

Your signature scent?

I wore Champs-Elysées by Guerlain for 20 years. Today, I wear Coco by Chanel.

Your favorite smell?

The smell of chocolate, of course!

A childhood scent?

My mother’s perfume. It’s a scent I instinctively associate with comfort, with her love. It does me so much good.

A scent you dislike?

Tar… it really disturbs me.

Your ideal perfume?

A tough question! I believe the perfect fragrance is one that is suggestive—present and subtle, but never overwhelming.

The smell of a place?

I adore the scent of luxury hotels—there’s always something warm and welcoming the moment you step through the door. But I also love the smell of a mountain chalet: raw, natural materials, wood, stone, the scent of fir trees and forest air.

A culinary scent?

Without hesitation—brown butter.

A raw material that reflects you?

Vanilla. It’s elegant and feminine in form, holding a hidden treasure inside. It’s precious, rare—an intoxicating and soft spice with sweet, cocoa-like notes. Yet it has boldness too—leathery, woody, strong. A dual personality I love.
